Mollis Fried Chicken

Mollis on Derby Road is the home of Fried Chicken by Alex Bond. Located next to his 1 star Michelin restaurant Alchemilla, this joint gives you a chance to try some food dreamt up by a Top Local Chef.

Back in 2021 I remember watching Alex on Snackmasters in a food challenge where he had to replicate a KFC Zinger Burger. I wonder if that has been any kind of inspiration when he took on this venture

I know that this joint has been open since 2022 and so once again I seem quite late to the party with this blog. Hey I am here now and I am in the mood for some chicken

First up we shared a dish of the Chicken Thigh Tenders with Salt and Pepper and a side of Hot Honey.

We picked this as it didn’t come drenched in any dressing and I really just wanted to check out the quality of the fried chicken.

I was very happy to bite into a nice crunchy coating, well seasoned with salt and pepper and clearly an excellent dredge. Inside I was treated to some juicy tender meat with a pretty thick piece of chicken thigh.

The pot of Hot Honey on the side was as expected, sweet and spicy, and I was pleased to be able to choose how much of it to pour over my chicken thigh. I like to have control of the destiny of my tastebuds in such matters.

THE KATSU – FRIED CHICKEN BURGER

I had THE KATSU – “Fried Chicken, Katsu, Tonkatsu, Pickled Carrot, Kewpie Mayo, Sesame” as it contained a lot of my favourite flavours. I found that The Katsu curry sauce was very prominent which is great if you love it. Perhaps it did dominate the sandwich a little too much both in flavour and in the experience as I got a lot of it smeared all over my face and fingers.

I liked the hints of the carrot pickle which brought a light tanginess, the kewpie mayo bringing a rich creaminess, and the salty and nutty sesame, but they were struggling to fight off the curry sauce.

This was a Big sandwich stuffed with a Big juicy piece of chicken and plenty of Katsu Curry sauce.

PINK FIR POTATOES

Instead of a bowl of fries we chose a side of Pink fir potato with truffle curd and crispy onions. Pink fir are my favourite potato to grow down the allotment (not been able to get any last couple of years) so was keen to try this.

I really liked this side dish, there was an excellent combination of flavours and although it was quite rich, I could not resist going back for more mouthfuls.

THE CAPRESE – FRIED CHICKEN SANDWICH

The second chicken sandwich devoured was THE CAPRESE – “Fried Chicken, roasted garlic mayo, mozzarella, chilli oil, roasted cherry tomatoes, balsamic glaze and basil.

I liked the look of this one more and preferred the flavour to the Katsu one. It was quite Mediterranean (if that makes sense) personally would have preferred less chilli oil but that’s just me.

It was a good chicken sandwich and I found that the flavour combination was well balanced

The style of Mollis was quite industrial, a big open space, pipes and wiring all visible and the walls plastered with Graffiti. I liked it, being a party of two we were not allowed to sit in the booth but I took a photo of the excellent art work as I gazed over at the empty space from the other side of the joint.

In summary I liked the vibe and concept of the place, Is it the best fried chicken I have ever eaten, probably not, but it certainly is a level above most chicken joints you will find in town.
